I'm sure some of you have wondered why Mom named her soup after someone named Kathleen. Before Mom wrote her first book, The Peach Tree Tea Room Cookbook, there was an 8 year old little girl from Dallas named Kathleen, who would come in with her family for lunch when they were in town. She enjoyed the artichoke soup so much during a visit that her mother would call before coming to town to request the soup for her daughter. Since this went on for years, the soup was appropriately named for her. Kathleen is now a wonderful mother with her own family and let's us know when she is in town so we can put her favorite soup on our menu. Kathleen's Cream of Artichoke Soup is the special soup on our menu this Saturday.
