Celebrating 40 Years!

On July 13th, 1972, my parents, Hector and Cynthia Pedregon, opened The Peach Tree in a historical limestone building as the first gift store in Fredericksburg. The success of our 40 year family business is largely because of their love of hospitality and natural sense for how people want to be treated. Originally, they had looked at the building with the idea of using it for storage but fell in love with the property and dreamed up an idea together. Along the way, they made incredible friends with the people who entered their door. A tea room was added with the purpose of giving people a place to sit and visit but grew into a seven day a week full service restaurant. Mom wrote her first cookbook because she could not keep up with handwriting so many recipes for customers who requested them. She wrote 2 more cookbooks in the middle of raising 3 children and growing and running The Peach Tree with Dad.

Without my beloved mother, Cynthia, our family is adjusting to daily life without her beautiful presence. Our Peach Tree family, customers and employees, are missing her, too. To honor her, Cynthia Collins Pedregon, we want to celebrate what she helped accomplish with The Peach Tree. We celebrate a place where it is comfortable to gather with family and friends for warm visits and where memories are made.

Treasured Time Together

As another summer comes to an end soon, I encourage you to find some time to sit around your table with family. Mom says "Miracles Happen Around the Table!"

All day, I have been thinking on what she described around her table last night. My brother, David, his wife and four children, joined my parents and their priest for dinner at their home. One of David's children pointed out that it takes 3 people in the kitchen to create the magic that Mom can produce alone in her kitchen.

Mom recently shed tears over not being capable of spending much time in her kitchen due to her need for constant oxygen. She is unable to get within 15 feet of her gas stove. So she watches and directs patiently from her kitchen table.

Apparently, the whole evening was a wonderful mix of conversation of all ages making memories together. This is how I grew up. With the business of having an active family and two parents who worked all day, six days a week, it was a challenge to get together and connect. Suppers were simple and quick, but slowly enjoyed as everyone talked about the highs and lows of their day.

Tonight, my husband and I had promised our 3 little ones a swim night. After a busy day of work, I packed a quick picnic and we shared time around a table in our swimsuits. I looked at our little miracles around the picnic table with a grateful heart. It is treasured time together.

  • sweet onion

  • locally grown tomato
  • New York sharp cheddar
  • herb mayonnaise
  • our house-made sweet chili relish (on the side)
  • on our own country french bun

Served with our House Salad.
